Ingredients

4 Herring filleted
2 tablespoons coarse rye flour
Salt and white pepper to taste
2 tablespoons butter

Instructions

1. Place herring fillets skin side down on a cutting board
2. Season them with salt and white pepper
3. Mix the rye flour with some white pepper and a little salt on a large plate
4. Heat a tablespoon of butter in a frying pan over a medium heat
5. When butter is hot just beginning to brown lay two pairs of fillets in rye flour
6. Coat on both sides and then fry in butter until golden brown on both sides
7. Transfer to individual plates and keep warm
8. Repeat with the remaining fillets
9. Serve on top of mashed potatoes with cranberries or cranberry jam
