Oil for frying
1 kg Gemfish fillets
2 tablespoons salad oil
2 tablespoons brown vinegar
1 teaspoon finely chopped parsley
1 teaspoon finely chopped shallot
Good sprinkle freshly ground black pepper

1 3/4 cups milk
3 tablespoons plain flour
1 egg
1/2 teaspoon salt


1. Cut Gemfish into serving portions
2. Combine marinade ingredients
3. Pour over fish portions, marinate for at least 1 hour, turning after 30 minutes
4. Make batter. Heat oil for frying in a large deep pan until hot
5. Coat fish portions in batter mixture and fry until browned and cooked through
6. Serve with lemon wedges, salad and fries
