375 ml bottle beer, personal choice of brand
2 Cups flour
750g skinned and boned Gurnard
1/4 Cup salt
1/4 Cup black pepper
1/4 Cup garlic powder
720 ml vegetable, canola, or peanut oil
Sea salt



1. In a large bowl, pour in 1 bottle of beer
2. Sift 1 ½ cups flour into bowl whisking gently until combined
3. Make house seasoning by combining salt, pepper, garlic powder together
4. Pour and stir into the beer mix
5. Rinse fish pat dry, season with salt and pepper both sides coat in beer batter
6. Dredge fish in remaining ½ cup of flour and slide into oil
7. Fry fish, turning frequently until deep golden and cooked through 4-5 minutes
8. Transfer to a paper towel-lined baking sheet and keep warm in oven
9. Fry remaining fish in batches, returning oil to 375 degrees F between batches
10. Sprinkle with crushed green onions
