Ingredients

4 x 180g coral trout
Grape seed oil
Sea salt and freshly milled pepper
300g shiitake mushrooms, stalked and sliced
2 cloves garlic, finely sliced
1 knob of ginger, peeled and julienned
20g Wakame (seaweed) softened in warm water
50ml tamari
3 tsp rice wine vinegar
12 green shallots, trimmed and washed
Lime wedges, to serve

Instructions

1. Heat a non-stick frying pan or BBQ plate and swirl in a little oil
2. Place seasoned fillet skin side down cook 6 minutes
3. Turn complete the cooking then remove from the heat
4.Before the fish is fully cooked, drizzle green shallots with a little oil
5. Season lightly and barbecue until soft
6. In a preheated fry-pan or clean part of a BBQ plate
7. Saute mushrooms in a little more oil until golden
8. Add garlic and ginger continue to fry for a further minute
9. Add tamari and vinegar then remove from heat fold through seaweed
10. Serve coral trout rested on vegetables with lime wedges separately
