Ingredients

Juice of 1 lemon
2 teaspoons fish sauce
1/2 cup dry white wine
2 tablespoons coconut milk
2 green shallots (sliced)
4 x 500g Hapuka steaks
Freshly ground black pepper to taste
1 lemon thinly sliced
8-12 fresh asparagus spears (halved)
10 English spinach leaves

Instructions

1. Heat lemon juice, fish sauce and wine in a shallow pan
2. Add shallots and cook over low heat 1-2 minutes
3. Add fish season to taste with pepper top with lemon slices and cover
4. Simmer 3 minutes
5. Scatter asparagus and spinach around fish
6. Cover and simmer 3-4 minutes until fish is cooked
7. Remove fish and vegetables from pan and keep warm
8. Add coconut milk to pan bring to the boil
9. Boil 5-6 minutes or until sauce reduces and thickens
10. Serve with sauce spooned over fish
