100g snow pea sprouts, trimmed
1 cup loosely packed fresh mint leaves
1/2 cup loosely packed fresh coriander leaves
50g French or golden shallots, sliced thinly
2 medium fresh red chillies, seeded, sliced
750g Hapuku portions
1/3 cup (80ml) lime juice, strained
2 tablespoons grated palm sugar
2 tablespoons fish sauce


1. Combine snow pea sprouts, mint, coriander, shallots and chilli in a medium bowl
2. Cook fish on a heated, oiled grill or barbecue about 4 minutes each side
3. Cooked until browned and just cooked through
4. Combine lime juice, sugar and fish sauce in a small bowl, stir until combined
5. Serve fish topped with salad and drizzled with lime dressing
