Ingredients

1 teaspoons mustard seeds
2 teaspoon butter
750g firm white fish, such as cod
1 can full-fat coconut milk
1/3 cup yellow curry paste

Instructions

1. Cut fish into 1 inch cubes and season with a little salt and pepper
2. In a medium saucepan, gently toast mustard seeds until they pop
3. Add butter, the yellow curry paste and turn up the heat
4. Fry about a minute, stirring regularly to stop the bottom from catching
5. Add coconut milk and bring to a simmer, cover for 5 minutes
6. Add fish cubes to the sauce and cover about 3-4 minutes, until cooked through
7. Turn off the heat. Season to taste
8. Add the honey for a little sweetness to balance the flavours
9. Serve on top of rice and steamed vegetables
