Ingredients

4 x 800g blue-eye cod fillets
1/4 cup toasted slivered almonds
2 garlic cloves, chopped
1 bunch basil, leaves only
1 bunch mint, leaves only
1/3 cup extra virgin olive oil
8 slices prosciutto
Olive oil spray for greasing

 

1. Combine almonds, garlic, basil and mint in a food processor
2. Process to a fine texture
3. Drizzle in oil and process until well combined
4. Place in a bowl, cover and set aside
5. Overlap 2 slices of prosciutto on a clean surface
6. Place a cod fillet at one end and roll up
7. Spray a chargrill pan with oil, and place over medium-high heat
8. Spray prosciutto wrapped cod with oil
9. Chargrill 3-4 minutes each side until cooked through
7. Repeat with remaining cod
8. Serve with almond mixture
