1 1/2 cups diced tomatoes (seeded, about 2-3 medium tomatoes)
60g fresh mozzarella (about a heaping ⅓ cup cubed)
1/4 cups fresh basil (finely chopped)
1 1/2 tablespoons balsamic vinegar
1 tablespoon extra-virgin olive oil
1/2 teaspoons minced garlic
1/4 teaspoons kosher salt
1/8 teaspoons black pepper
600g Grouper fillets
1 teaspoon extra-virgin olive oil
1/4 teaspoons kosher salt
1/8 teaspoons black pepper


For the Caprese Topping
1. Combine tomatoes, mozzarella, basil and vinegar
2. Add olive oil, garlic, salt, and black pepper
3. Let rest for 10-15 minutes while you prepare fish

1. Prepare and preheat grill
2. Brush fish thoroughly both sides with 1 teaspoon olive oil
3. Sprinkle ¼ teaspoon salt and ⅛ teaspoon black pepper evenly over both sides
4. Can choose to cut fish into individual portions before grilling, or afterwards
5. Grill fish over medium heat
6. Allow first side to sear 3-4 minutes until lightly golden brown and grill marks form
7. Rotate fish about 90 degrees (still grilling on first side)
8. Creating cross-hatched grill marks, grilling for about another 3-4 minutes
9. Flip fish to second side continue grilling until fish is cooked through
10. Spoon Caprese topping over fish to serve
