Ingredients

4 portions bass grouper
1 teaspoon grated lime rind
3 tablespoons lime juice
1/2 tablespoon crushed black pepper
1 tablespoon sugar
1/2 cup white wine or sweet sherry
Mixed lettuce leaves and orange segments

Instructions

1. Combine rind, juice, black pepper, sugar and wine set aside
2. Panfry fish fillets on medium-high heat 3-4 minutes each side
3. Transfer to serving plate
4. Add sauce mix to pan and bring to the boil
5. Reduce sauce on high heat for 2-3 minutes then spoon over fish
