1 cup long grain rice
2 cups boiling water
4 x 150g Grouper fillets
1 clove garlic sliced
2cm piece fresh ginger thinly sliced
1 teaspoon sesame oil
1 1/4 cups vegetable stock
1 tablespoon corn flour
2 tablespoons white vinegar
1 tablespoon sugar
1 small carrot cut in thin strips
1/4 cup oyster sauce
1 small stick celery cut in thin strips
2 shallots thinly sliced
1/4 cup sliced water chestnuts cut in thin strips


1. Combine rice and water in a large microwave safe bowl
2. Cover cook on high 12 minutes or until rice is tender cover, leave to stand
3. Arrange fish fillets a single layer over base of a large microwave safe dish
4. Top with ginger and garlic slices, drizzle with sesame oil and half the stock
5. Cover and microwave on high 7 minutes until fish flakes when tested with a fork
6. Cover and let stand
7. Blend cornflour with remaining stock in a medium microwave safe bowl
8. Stir in vinegar, sugar and oyster sauce, microwave on high 3 minutes
9. Stirring after each minute until sauce boils and thickens
10. Add vegetables and water chestnuts microwave a further minute to soften vegetables
11. Spoon rice onto serving plates top with fish fillets and spoon sauce over top
