Ingredients

1 cup panko breadcrumbs
1/2 cup finely grated parmesan cheese
4 garlic cloves crushed
1/3 cup finely chopped fresh herbs (parsley, chives and thyme)
Finely grated zest of 1 large lemon
1/3 cup horseradish cream
2 Salmon fillets
Lemon and caper crème fraiche to serve
Crème Fraiche
300ml tub crème fraiche
Finely grated zest and juice of ½ a lemon
2 tablespoons finely chopped chives
1 tablespoon chopped capers

Instructions 

1. Preheat oven to 220%C 200%C fan forced
2. Line large baking trays with baking paper
3. Combine all crème fraiche ingredients in a bowl mix well, chill until required
4. Combine crumbs, parmesan cheese, garlic, herbs and lemon zest in a bowl
5. Season with salt and pepper toss to combine
6. Place fish on prepared trays rub horse radish cream evenly over surface of fish
7. Add 1/4 cup olive oil to breadcrumb mixture and toss well to coat
8. Press half crumb mixture over each fish portion
9. Cover evenly and drizzle with a little extra olive oil
10. Bake in the oven 15-20 minutes until just cooked through, set aside 5 minutes to rest before serving
11. Serve with lemon and caper crème fraiche and a fresh salad
