Ingredients

2 tablespoons salt reduced soy sauce
1 tablespoon fresh ginger peeled and minced
2 x 3 inch cinnamon sticks
1 x 375g can apricot nectar
4 x 185g Ocean Trout steaks

Instructions 

1. Combine first four ingredients in a saucepan bring to the boil
2. Reduce heat simmer until reduced to 3/4 of a cup will take about 30 minutes
3. Strain apricot mixture through a sieve over a bowl and discard solids
4. Preheat grill place fish on grill lined with foil and grill 5 minutes
5. Brush fish with 1/4 cup apricot mixture grill a further 3 minutes
6. Grill until lightly browned and fish flakes easily when tested with a fork
7. Serve fish with remaining apricot drizzled over top
