270ml light coconut milk
2-3 tablespoons Thai red curry paste
1/4 cup grated palm sugar or brown sugar
1 tablespoon fish sauce
2 tablespoons tamarind concentrate
1 kaffir lime leaf very finely shredded
4 x 200g Ocean Trout steaks
1 1/2 tablespoons peanut oil
2 bunches Chinese broccoli (gai lan) or other Asian greens cut into 10cm lengths
1 long red chilli cut into thin match sticks
1/3 cup coriander sprigs to serve


To make sauce

1. Heat 1/4 cup coconut milk in a small saucepan on medium heat
2. Stir occasionally for 3-5 minutes until oil starts to separate from milk
3. Add half of curry paste and stir 2-3 minutes until fragrant
4. Add remaining coconut milk, sugar, fish sauce and tamarind
5. Simmer 5 minutes until thickened slightly stir in lime leaf remove from heat
6. Pat fish dry with paper towel spread 1 teaspoon remaining curry paste over flesh side of each portion


7. Heat half the peanut oil in a pan on high cook fish skin side down for 2 minutes until crisp, turn and cook another 1-2 minutes until firm but still pink inside
8. Heat remaining oil in fry pan on high separate broccoli stems from leaves, cook stems for 1 minute until bright green, add leaves and stir-fry 1 minute until just wilted
9. Divide between plates and top with fish drizzled with the sauce. Scatter top of fish with chilli and coriander
