Ingredients

4 Ocean Trout steaks
Salt and pepper to taste
Vegetable oil for cooking
Corn Salsa
3 corn cobs (husk removed)
1/2 cup semi sun dried tomatoes (diced)
1 bunch parsley (chopped)
1 small red onion (finely diced)
Dressing
4 tablespoons olive oil
1 tablespoon white wine vinegar
2 teaspoons Dijon mustard

Instructions 

1. Cook corn in boiling water 10 minutes, Cool in ice water remove corn kernels
2. Combine dressing ingredients in a bowl and mix well
3. Add salsa ingredients to dressing and mix
4. Pan - fry or grill fish until just cooked
5. Serve with salsa
