Ingredients

600g baby potatoes halved
1 bunch spinach trimmed
2 teaspoons olive oil
4 x 150g Ocean Trout steaks
2 tablespoons seasoned flour
Lemon cheeks to serve
Macadamia Salsa
1/3 cup roasted macadamia nuts chopped plus 1 tablespoon to serve
1/3 cup extra virgin olive oil
Finely grated rind of 1 lemon
1/2 cup chopped coriander
1 tablespoon chopped flat leaf parsley
1 tablespoon chopped mint

Instructions 

1. Steam potatoes until just tender add spinach
2. Steam 3-5 minutes until spinach just wilted remove from heat
3. Make salsa by combining all ingredients in a bowl mix well set aside
4. Heat oil in a large pan on high, dust trout with flour shake off excess
5. Cook 3 minutes each side until cooked through
6. Arrange potatoes and spinach on plates top with trout
7. Spoon over salsa and sprinkle with reserved nuts
8. Serve with lemon cheeks
