800g ocean trout skin removed, cut into2cm strips
1/4cup peanut oil
1 red onion cut into thin wedges
2 cloves garlic thinly sliced
5cm piece fresh ginger, peeled cut into matchsticks
1 medium red chilli deseeded, cut into matchsticks
2 bunches English spinach, chopped
1 cup coriander leaves
1cup mint leaves
2 cups bean sprouts
100g packet crunchy noodles
Mint sprigs to garnish
Lime wedges to serve

2 tablespoons kecap manis (sweet soy sauce)
1 tablespoon soy sauce
2 teaspoons ground turmeric
2 teaspoons hot chilli sauce
1 teaspoon lime juice





1. Make marinade by combining all ingredients in a non- metallic bowl, add fish
2. Toss to coat refrigerate covered 30 minutes, drain well reserving marinade
3. Cook fish in two batches in 2 tablespoons of oil heating in a large wok over high heat before adding fish, cook 1 minute on each side or until golden, remove cover to keep warm
4. Clean wok with kitchen paper, heat remaining oil over high heat add onion, garlic, ginger and chilli stir-fry 1 minute, add reserved marinade and bring to the boil
5. Add spinach, stir-fry 30 seconds or until just wilted turn off the heat. Add herbs, sprouts and noodles toss to combine
6. Serve spinach mixture topped with fish, garnished with mint and lime wedges
