1kg blue grenadier
Juice and rind of 1 lemon
Juice and rind of 2 limes
3 cloves garlic, peeled and chopped finely
1 tablespoon mixed herbs
Salt and pepper, to season


1. Preheat a fan forced oven to 220°C.
2. Line a large roasting pan or casserole dish with foil,
3. Ensure it comes far enough up sides so juices do not seep out
4. Remove bones from the fish and cut into even portions
5. Arrange in a single layer in the prepared pan
6. Combine lemon and lime juice in a small jug, pour evenly over fillets
7. Scatter over chopped garlic, rind and herbs season well with salt and pepper
8. Bake in preheated oven for 12-15 minutes
9. Test fish is cooked by inserting a fork into the thickest part of the fillet
10. The flesh should be white and flake apart easily
11. Serve with homemade chips and salad
