18 garfish fillets
2 tablespoons extra-virgin olive oil
2 tablespoons lime juice
1 tablespoon chopped fresh thyme (optional)
Cracked black pepper
2 tablespoons salted baby capers, rinsed
100g unsalted cultured butter


1. Combine olive oil, lime juice, thyme a generous amount of pepper

2. Mix in a shallow, non-metallic dish

3. Add garfish turn to coat in the mixture. Set aside for 5 minutes

4. Heat a large fry pan, drain fish fillets

5. Cook in hot pan 1-2 minutes each side or until just cooked through

6. Remove fish from the pan and keep warm

7. Reduce heat, add remaining marinade, capers and butter

8. Cook just until the butter turns a nutty brown colour

9. Place garfish fillets onto serving plates

10. Drizzle with the sauce and serve at once
