Ingredients

2 kg fresh Flake cut into steaks
8 ounces pineapple juice
½ cup soy sauce
¼ cup sherry
2 tablespoon brown sugar
1 tsp ground ginger
1 tsp dry mustard
1 clove crushed garlic

Instructions 

Make marinade
1. Combine pineapple juice, soy, sherry, brown sugar, ginger, mustard and garlic
2. Pour marinade over Flake
3. Cover refrigerate for a minimum of one hour or up to 3 hours
4. Drain fish and reserve marinade
5. Place on hottest part of grill for 2 minutes and baste with marinade
6. After searing, move to the side and cook additional 3-5 minutes
7. Fish should be firm, but flaky
