2 kg fresh Flake fillets
1/2 cup orange juice
2 tablespoons light soy sauce
1 tablespoon lemon juice
1 clove garlic , minced
1/4 teaspoon pepper
1 tablespoon olive oil


1. Combine all marinade ingredients together in a medium glass bowl mix evenly
2. Place Flake fillets in marinade so that they are completely covered
3. Place bowl of fish and marinade in refrigerator allow to marinate 15 minutes
4. Turn steaks and marinate another 15 minutes
5. Remove the steaks from marinade and place in an oiled baking pan
6. Sprinkle with paprika as desired
7. Place in an oven preheated to 400 degrees F
8. Cook 10 minutes per inch of thickness or until the fish flakes easily
9. Remove steaks from marinade, spray with cooking oil and place on hot grill
10. Grill for 5 or 6 minutes and then turn
11. Grill for an additional 5 or 6 minutes or until steaks are flaky
