1 each John Dory filet
4 ounces of butter
4 each Roma tomatoes
1 each olive poached baby artichoke
1 each lemon juice
1/2 cup of olive oil
1 teaspoon of Dijon Mustard
1 each sliced and baked potato


1. Saute in fry pan John Dory fillet with melted butter, sliced lemon and rosemary
2. Finish cooking in the preheated oven for 6 minutes
Dried Roma Tomato
1. Halve tomatoes put side by side on half sheet pan cover with parchment paper
2. Seasoned with sea salt and fresh cracked black pepper
3. Drizzle with olive oil and baked in preheated oven at 300% 15 to 25 minutes
4. Remove from oven and let it cool down to room temperature for serving
5. In a rectangular dinner plate place Dory fillet to one side
6. Garnish with sliced lemon and rosemary on top,
7. Top with light melted butter and lemon juice emulsion
8. On the other side of the plate arrange baked sliced potatoes
9. Top with a oven dried tomatoes, and then the warm olive oil poached artichoke
