4 x 185g fresh grouper fillets
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 tablespoons olive oil
4 tablespoons butter
1 tablespoon balsamic vinegar
1 teaspoon minced shallots
1 teaspoon fresh lemon juice


1. Preheat oven to 425%F/220%C
2. Pat fish dry with paper towels let stand at room temperature 10 minutes
3. Sprinkle fillets with salt and pepper
4. Heat oil in a large ovenproof skillet over medium-high heat
5. Place fillets top side down in hot oil
6. Cook 3 to 4 minutes until edges are lightly browned and transfer skillet to oven
7. Bake 4 to 5 minutes until fish is opaque
8. Remove skillet from oven and place fish seared side up on a platter
9. Wipe skillet clean and heat to medium heat
10. Cook butter 2 to 2 ½ minutes until butter begins to turn golden brown
11. Pour butter into a small bowl and whisk in vinegar, shallot, and lemon juice
12. Season with salt and pepper
