small bunch coriander (leaves only)
1/2 clove garlic 
1 lemon juiced
small chunk ginger roughly chopped
1 green chilli roughly chopped
50g desiccated coconut 
1/2 teaspoon ground cumin 
1 tablespoon soft butter 
2 portions Bass Grouper about 150g each
4 baby Pak Choi quartered
sesame oil


1. Heat oven to 200%C 180%C fan forced
2. Combine coriander leaves, garlic, lemon juice, ginger and chilli
3. Process and to a paste and scrape into a bowl
4. Stir in the coconut, cumin and season
5. Tear 2 large pieces of foil and smear with a little butter
6. Spoon 2 tablespoons of coconut mix onto each foil top with the fish
7. Spoon over rest of the mix and dot with a little more butter
8. Seal parcels place on a baking tray, Cook 15-20 minutes in the oven
9. Steam Pak Choi and dress with sesame oil, place fish on top to serve
