Ingredients

4 x 180g hapuku or monkfish fillets, skinned and boned
16 cherry tomatoes
200gm potato, scrubbed (or peeled)
1 garlic clove
1/4 cup Italian parsley
Extra Virgin Olive
Salt and pepper
Aluminium Foil
Baking paper

Instructions

1. Pre-heat oven to 200ºc
2. Lay out 4 sheets of foil and top with 4 sheets of baking paper
3. Making sure the paper is slightly smaller than foil
4. Place potatoes in a pot of cold water, season with salt and bring to the boil
5. Reduce heat and simmer 8 minutes, drain and allow to cool and thinly slice
6. Place the sliced potato on the paper
7. Season Hapuka with salt and pepper and place on top of the potatoes
8. Cut cherry tomatoes in half and scatter over the fish
9. In a mortar and pestle, grind garlic, parsley and olive oil together to form a wet paste
10. Spoon over the fish, season again with salt and pepper
11. Wrap the parcel up tightly making sure no steam will escape
12. Place parcels into the hot oven and bake at 200ºc for 8 minutes
13. Remove and allow to rest and serve in the parcel
