1 telegraph cucumber, halved
4 tomatoes
2 spring onions, finely sliced
1/2 tsp garlic, minced
2 tablespoons mint, freshly sliced
150 grams sweetened natural yoghurt
salt and pepper to season
100g garlic butter, softened
1/4 cup fresh mixed herbs, finely sliced
2 x 400g Hapuka steaks
1 French stick, cut into 4, halved and toasted


1. Slice cucumber finely and cut tomatoes into wedges
2. Combine tomatoes, cucumber, spring onion, garlic, mint and yoghurt
3. Season with salt and pepper and toss well to coat
4. Mix softened butter with the herbs
5. Cut the small bone form the centre of the fish and cut the steaks in half
6. Spread each with butter
7. Cook fish on a hot barbecue 2 minutes each side
8. Toast the bread while cooking the fish
9. Serve Hapuka with tomato and cucumber salad on toasted French bread
