Ingredients

1/4 cup of dry sherry or vermouth
3 tablespoons low-sodium soy sauce
2 teaspoons sesame oil
1/4 cup diagonal shallots
1 teaspoon freshly grated ginger
1 teaspoon fresh finely chopped garlic
2 Orange Roughy fillets
Zest of an orange

Instructions

1. Preheat the oven to 200 degrees C
2. Mix sherry or vermouth, soy, sesame oil, shallots, ginger, zest and garlic 
3. Place fish in ovenproof dish
4. Drizzle marinate over the fish and bake about 12 min or until fish flakes
