2 Orange Roughy fillets
1 egg white
3 tablespoons dried bread crumbs; seasoned 
2 teaspoons olive oil; or vegetable oil
1/3 cup water
1/4 cup dry white  wine
1 tablespoon parsley
1/2 teaspoon Instant chicken stock 
1 clove garlic; minced
1 tablespoon fresh lemon juice


1. Dip fish fillets one at a time in egg white then bread crumbs
2. Coat both sides evenly; repeat for the remaining fillets
3. Heat oil in non-stick skillet add fillets cook on medium high heat turning once
4. Cook until fish is cooked thoroughly and flakes easily when tested with a fork
5. Transfer fish to a platter and keep warm
6. To same skillet add garlic cook on medium heat until golden 30 seconds
7. Stir in water, wine, parsley, lemon juice, and broth mix
8. Cook over high heat until mixture comes to a boil
9. Continue to cook until mixture is reduced to 1/4 cup about 4-5 minutes
10. Pour over fish and serve
