Ingredients

4 Orange Roughy fillets, 1/2 inch thick
1/4 cup low-fat sour cream
1/4 cup finely chopped shallots
1 clove garlic, minced finely
3 tablespoons capers, drained and rinsed
1/2 a 315g can of organic fire roasted diced tomatoes)
125g feta cheese with dried basil and tomato or plain feta cheese
2 teaspoons grated lemon zest
1 teaspoon dried oregano
1/2 teaspoon fresh ground black pepper
1/2 teaspoon sea salt
2 tablespoons white wine

Instructions

1. Preheat oven to 2oo% C
2. Line baking sheet with foil. Lightly spray foil with non-stick spray
3. Season fish on both sides with sea salt and fresh ground pepper
4. In a medium bowl combine feta, sour cream, shallots, garlic, capers, tomatoes, lemon peel and oregano stir until thoroughly combined
5. Add wine to feta cheese mixture
6. Arrange fish on prepared baking sheet. Spread cheese topping over fish
7. Bake until fish is just cooked through, approximately 10-12 minutes
