600g Orange Roughy fillets
1 tablespoon Essential olive oil
1/2 cup finely chopped onion
1 can diced tomatoes, drained
1/2 cup Pitted Kalamata green or black olives, cut in two lengthwise
2 teaspoons white wine
1 teaspoon basil Leaves
1/2 teaspoon garlic Powder
1/4 teaspoon thyme Leaves


1. Preheat oven to 190% C Coat baking dish without any stick cooking spray
2. Place fish in single layer in baking dish. Delicately salt and pepper
3. Bake 12 minutes. If fish is over 1-inch thick, increase cooking to fifteen minutes
4. Heat oil in medium saucepan on medium heat
5. Add onion; cook and stir 5 minutes or until softened
6. Add tomatoes olives, wine, basil, garlic, thyme Simmer uncovered 3 minutes
7. Remove fish from oven
8. Spoon sauce over bake 5 minutes longer or until fish flakes easily with a fork
9. Serve quickly
