Ingredients

4 Orange Roughy fillets or 2-3 tablespoons olive oil
2-3 tablespoons paprika
2-3 tablespoons fines herbs( mix of parsley, chives, tarragon, chervil or fennel
2 tablespoons sea salt
1 tablespoon lemon zest (more if you wish)
2-3 tablespoons lemon juice (or serve with lemon wedges)
Fresh ground black pepper

Instructions

1. Preheat griller
2. Place fillets in a roasting pan and rub with salt and oil
3. Can spray bottom of pan with non-stick spray or oil to keep from sticking
4. Sprinkle paprika, fines herbs and zest evenly on fish
5. Grill fish for 4 minutes or until cooked to taste grilling until fish flakes easily
6. Sprinkle with lemon juice and freshly ground black pepper
7. Serve with lemon wedges
