1-2 teaspoons vegetable oil
6 cloves garlic, minced
1 large (or 2 medium) shallots, minced
1 tablespoon white wine
2 tablespoon honey
1/3 cup balsamic vinegar
4 teaspoons Dijon mustard
1 pinch oregano (dried)
salt, pepper and brown sugar to taste
4 Orange Roughy fillets
1-2 tablespoons vegetable oil


1. Heat a medium saucepan over medium heat
2. Add the oil and when it shimmers add the garlic and shallots
3. Fry, stirring, until they soften, about 5 minutes
4. Add the rest of the glaze ingredients (through to oregano) and whisk together
5. Simmer for 5 minutes or until thickened  
6. Taste for salt and pepper, or brown sugar if needs a little sweeter
7. Heat a large non-stick skillet over medium high heat with 1-2 tablespoons of oil
8. When oil is shimmering add the fish fillets and fry until golden and flip
9. After flipping brush with the glaze and cook until done
10. Remove and flip to the other side and immediately brush with more glaze
11. Reserve glaze–everyone wants a different amount
