Ingredients

4 John Dory Fillets
Olive oil
Lime juice
Butter
Sea salt and black pepper
2 tablespoons capers
3 teaspoons freshly chopped red chilli
Salt and freshly ground black pepper

Instructions

1. Place fillets in shallow dish drizzle over oil, juice and salt marinate 20 minutes
2. Heat fry pan to medium heat fry fillets 1minute each side
3. Add butter to the pan and baste fish until cooked through
4. Combine capers, chilli a little olive oil, salt and pepper
5. Garnish fish fillets with a slice of lime
