2 large fillets of cream dory
5 cloves of garlic, minced
2 tablespoons grated fresh ginger
3 tablespoons Chinese cooking wine
2 tablespoons hoisin sauce
1 tablespoons sesame oil
1 1/2 tablespoons soy sauce
3 tbsp. vegetable oil
salt and pepper to taste
water for steaming


1. Marinate fillets in salt, pepper, and half of the grated ginger
2. Steam for about 15 minutes. Set aside
3. Saute garlic in vegetable oil until toasted Set aside
4. In same pan add ginger, hoisin, soy, Chinese cooking wine, and sesame oil
5. Let simmer for about 2 minutes over medium heat
6. Drizzle sauce over steamed fillets and sprinkle with the toasted garlic
7. Make this dish at the last minute
8. Start with toasted garlic and ginger-hoisin sauce
9. Best to serve straight from steamer and drizzle with sauce just before serving
