1kg fillets of dory (or any other white fish)
500 ml crisp white wine
1 cup fresh porcini mushrooms, chopped
1 onion
1/4 cup butter
1/4 cup fresh tarragon
Flat leaf parsley, chopped


1. Sprinkle a little olive oil on dory fillets, rub well with salt and pepper both sides
2. Lay fillets flat in a dish sprinkle half the chopped tarragon
3. Pour 1/4 of the wine over the fish
4. Cover, marinate at least 30 minutes, longer is advisable
5. Melt butter in a pan, saute onions until soft and translucent
6. Ensure not to brown them
7. Once a sweet smell begins to emanate, add mushrooms and cook 3-4 minutes
6. Pour remaining wine, tarragon leaves and parsley, season with salt and pepper
7. Simmer on low heat 8–10 minutes
8. Once sauce has been reduced by 20% switch off heat
9. Leave sauce covered to avoid the flavours from escaping
10. Heat a pat of butter in another pan
11. Cook dory fillets, lightly pan-fry about 3-4 minutes each side
11. As fillets are about to be done, add remaining marinade to pan cook with fillets
12. This helps to enhance flavours of the fish
13. This step should be done 2 minutes before taking the fillets off the heat
14. Plate up the fish and pour over the white wine sauce generously
15. Serve immediately
