Ingredients

24 Scallops
1 avocado sliced
2 oranges, peeled and segmented
1 small red onion finely diced
1 packet baby spinach
Lime Dressing
4 tablespoons olive oil
1-2 limes, juice and zest
1/2-1 teaspoon palm or white sugar

Instructions

1. Heat fry pan on high heat brush scallops with oil
2. Cook 30 seconds to 1 minute each side until just cooked
3. combine olive oil, lime juice, zest and sugar, mix well
4. Combine avocado, orange segments, onion and spinach in a bowl
5. Add half the lime dressing, mix and place on plates
6. Place scallops on top of the salad and drizzle remaining dressing over
