500g scallops
3-4 garlic cloves finely chopped
1-2 red chilli finely chopped
2 tablespoons capers
1 bunch chives finely chopped
60g rocket leaves
1/2 cup white wine
1 packet spaghetti
Olive oil
Salt and pepper to taste


1. Boil a large pot of salted water and cook pasta
2. Heat pan on high
3. Cook scallops in batches with a drizzle of oil 30 seconds to a minute each side
4. Set aside and add wine to same pan to deglaze
5. Add oil, garlic, capers and chilli cooking 1-2 minutes
6. Return scallops to pan add spaghetti, chives and rocket, stir through and serve
