16 x Scallops
16 x Rashers Smoked Streaky Bacon
16 x small Skewers bamboo or wooden
A glug of Olive Oil
Black Pepper and Salt
Zest of lemon


1. Add lemon zest to olive oil with a few twists of black pepper and a pinch of salt
2. Remove rind from the streaky bacon and wrap around each scallop
3. Soak skewers in water first as this helps prevent them from burning
4. Carefully skewer scallops with a skewer about 4 scallops 
5. Using a brush liberally coat scallops with lemon oil
6. Cover with cling wrap, leave to marinate at least 2 hours or better overnight
7. Place skewers on a hot barbecue 3-4 minutes each side
8. Scallops should be just cooked and very slightly translucent in the centre
9. Serve with mixed salad leaves and a wedge of lemon
