1 large red pepper
1 tablespoon white wine vinegar
1 tablespoon olive oil
2 red chillies deseeded
1 large garlic clove
800g raw king prawns
Lime wedges to serve


1. Heat oven 220%C–200% fan forced place red pepper whole on  baking tray
2. Roast about 30 minutes until skin is blackened and the pepper is collapsing
3. Place in a bowl and cover tightly with cling wrap
4. When cool enough to handle peel the skin away and remove the seeds
5. Place with all other marinade ingredients and pulse until smooth
6. Toss prawns in the marinade to coat, cover and chill for 15 minutes
7. Heat a fry pan or barbecue to very hot cook prawns with the marinade
8. Season with salt for a couple of minutes until just cooked through
9. Serve immediately with lime wedges and crusty bread to mop up the sauce
