16 large green prawns shelled, de-veined tails intact
1/4 cup corn flour
1 cup self-raising flour
1/4 cup corn flour, extra
1 cup water
1/4 teaspoon lemon juice
1 tablespoon oil
1/4 cup honey
Oil for deep frying
1/4 cup sesame seeds, lightly toasted


1. Pat prawns dry using paper towels then lightly dust them with the corn flour 

To make Batter 
1.Sift flour and extra corn flour into medium bowl, combine water, juice and oil
2. Make a well in the centre of flour and gradually add liquid
3. Beat well to make a smooth batter 
4. Place honey in a large pan and heat over very gentle heat
5. Remove from heat and keep warm 
6. Heat the oil in a large, deep frying pan until moderately hot
7. Dip prawns in the batter, drain excess
8. Using tongs or a slotted spoon, place prawns, a few at a time, in hot oil
9. Cook 2-3 minutes or until prawns are crisp and golden
10. Drain on paper towels and keep warm
11. Place cooked prawns in the pan with the warmed honey toss gently to coat
12. Remove and place on serving plate, sprinkle with sesame seeds
13. Serve immediately
