1/4 cup rice flour
Salt and pepper to taste
1 egg lightly beaten
2 teaspoons fish sauce
1 cup panko bread crumbs
1 cup shredded coconut
1kg large raw king prawns peeled and deveined leaving tails in tact
Peanut oil for frying
Cos lettuce leaves and lime wedges to serve
Fresh coriander leaves to garnish


1. Place flour on a plate season with salt, pepper, whisk egg and sauce together 
2. Combine breadcrumbs and coconut in a medium bowl
3. Toss prawns in flour, Dip in egg mixture, coat in breadcrumb mixture
4. Heat enough oil in a large wok until hot to shallow-fry prawns
5. Add prawns in batches, fry 2-3 minutes, until lightly browned, cooked through 
6. Drain on absorbent kitchen paper
7. Serve prawns on cos lettuce, lime wedges garnish with fresh coriander leaves
