2 kg medium- sized octopus
4garlic cloves, crushed
250 ml (1 cup) light extra-virgin olive oil or grapeseed oil
1.5 kg potatoes, peeled and quartered
10 French shallots
4 large carrots, quartered lengthwise
1 lemon, juiced
6 small rosemary sprigs
250 ml (1 cup) dry white wine


1 .Once cleaned, use tongs to lower octopus into a pot of barely simmering water
2. Simmer for approximately 20–25 minutes
3. Remove, drain and cut into quarters
4. Simmering helps with tenderising also removes water from body of the octopus
5. If latent water in octopus is not removed, the dish will become more like stew
6. Combine garlic with 150ml of the oil and set aside
7. Line bottom of the baking pan with potatoes and drizzle with the remaining oil
8. Add shallots, carrots and octopus
9. Season liberally with about 1½ tablespoons salt and ½ teaspoon pepper
10. Drizzle over the garlic oil. Squeeze over juice of a ½ lemon
11. Garnish with rosemary sprigs
12. Cover, temperature should be at least 250°C (480°F)
13. After 45 minutes remove from oven, remove lid and turn over with a large spoon
14. Pour over white wine and return the pan with the lid back into the oven
15. Cook for a further 30 minutes. If the liquid in has evaporated add a little more oil and wine
16. Remove from the oven and squeeze over the remaining lemon juice before serving
