1 onion finely chopped
1 teaspoon extra virgin olive oil
5 cherry tomatoes halved
2 Bream fillets
4 teaspoons water
A mix of fennel seeds, thyme, garlic powder and ground rosemary
Fresh chopped basil


1. Sauté onion with olive oil
2. Add tomatoes after a minute or 2 add brandy
3. Allow to evaporate this will caramelise onion and tomatoes
4. Add fish fillets and water
5. Mix herbs together add to pan cover and cook no more than 10 minutes
6. Add salt, pepper and fresh basil
