2 tablespoons olive oil
1 teaspoon clear honey
Juice and zest of 1/2 lime
1 clove garlic, crushed
2.5cm piece root ginger, peeled and finely grated
1 tablespoon fresh coriander, finely chopped
1/2 teaspoon each of ground cumin and ground coriander
Salt & freshly ground black pepper
2 sea bream fillets


1. Mix together all the ingredients except the fish
2. Spread one side of each steak with half the lime mixture
3. Panfry for 5-6 minutes
4. Turn steaks over, spread with remaining mixture
5. Panfry for a further 5-6 minutes or until fish is cooked
6. This dish needs only simple accompaniments such as new potatoes and green vegetables
