Ingredients (serves 4)

3kg mussels
4 tablespoons olive oil
1 x large sweet Spanish onion or 2 x onions (finely chopped)
200g - 250g chorizo sausage (skinned and cut into chunks)
3 x garlic cloves (large) finely chopped or mashed
500 ml (or 350ml) dry cider
Ground black pepper
3 tablespoons chopped parsley


1. Heat oil and saute chorizo, add onion cook until softened and slightly coloured
2. Add garlic and cook for a couple of minutes longer
3. Throw in the mussels pour the cider over, season with pepper
4. Bring to the boil reduce heat and cover to leave mussels to open 2-4 minutes
