1teaspoon ground cumin
1/2 teaspoon ground coriander
1teaspoon paprika
1teaspoon turmeric
1teaspoon ground ginger
2 cloves garlic, crushed and chopped
1 lemon, zested and juiced
1 onion
4 x 150g fresh sea bream fillets
200g couscous
1 tablespoon olive oil
50g sultanas
Bunch coriander, chopped


1 .Mix the cumin, coriander, paprika, turmeric and ginger in a large bowl place
2. Add the garlic and lemon zest and finely grate in the onion.
3. Mix well add bream, coating well all over in the spice mix
4. Cover and place in the fridge for at least an hour or overnight is best
5. Put couscous, sultanas and lemon juice in a bowl just cover with boiling water
6. Cover the bowl with a plate
7. Heat oil in a large fry pan and turn the grill to high
8. Place fillets in the pan skin side down cook 2 minutes
9. Place fry pan under the grill and cook 3 more minutes
10. Mix the couscous with a fork to break it up and divide between plates
11. Top with the grilled fish and sprinkle with coriander
