Ingredients

750g Salmon or Ocean Trout with skin cut into 4
1 thumb size red chilli seeded and diced
2 garlic cloves finely chopped
1 small handful fresh coriander chopped
1 tablespoon fish sauce
1 tablespoon sesame or vegetable oil
2 tablespoons honey
1 teaspoon sesame seeds
Salt and cracked black pepper to season
Salad
125ml rice vinegar or white wine vinegar
30g caster sugar
2 medium cucumbers very thinly sliced
2 carrots peeled and very thinly sliced
1 small red onion finely diced
1 small chilli cut into thin rings
1 small handful fresh coriander chopped

Instructions

1. Combine all ingredients in a bowl
2. marinate fish in refrigerator at least 10 minutes or overnight
3. Grill fish skin side down about 8 minutes until skin crispy around the edges
4. Combine vinegar and sugar in a pan, bring to the boil
5. simmer 1 minute or until syrupy, refrigerate to cool 
6. Toss cucumber, carrots, onion, chilli, coriander in a bowl with cooled syrup
7. Garnish with coriander and serve
