Ingredients

1kg Salmon fillet
2 large lemons thinly sliced
1 bunch dill leaves picked
Salt & ground black pepper to taste
Lime or lemon wedges to serve
Mayonnaise
2 egg yolks
2 limes, rind finely grated, juiced
¾ cup light olive oil
Salt & ground black pepper to taste

Instructions

1. Preheat oven to 180%C line roasting pan with foil
2. Place half lemon slices and half dill on the foil where salmon will lie
3. Remove bones from salmon top with lemon, dill, sprinkle remaining dill over
4. Top with remaining lemon slices bring edges of foil together to wrap salmon
5. Bake in the oven 25 – 35 minutes or until just cooked

To make Lime Mayonnaise
1. Place egg yolks and lime juice in a blender, blend to combine
2. Motor running gradually add oil in very thin stream until mixture thick and pale
3. Add lime rind and season with salt and pepper
4. Unwrap foil remove lemon slices serve with mayonnaise lemon or lime wedges
