
Ingredients
4 Gemfish portions
1 cup dried bread crumbs (try the Japanese panko crumbs)
1/2 cup of plain flour
150g melted butter
1 teaspoon chopped lemon thyme (regular thyme will do, but add grated zest of 1/2 a lemon)
1 tablespoon chopped parsley (or chervil, or both)
1 tablespoon finely chopped chives
Instructions
1. Preheat your oven to about 180°C
2. Place flour in bowl melted butter in another, crumbs mixed with herbs in a third
3. Season the fish lightly, then coat in the flour, shaking off any excess
4. Coat with melted butter, work quickly before butter hardens on cold fish pieces
5. Coat in the herb crumbs
6. Place on an oven tray cook in oven until flesh is white all the way through
7. This dish is great with Hollandaise or Tartare sauce
8. Make own, using egg mayonnaise, chopped dill-cucumber, capers, parsley and lemon juice
