Ingredients

2 x fillets of gem fish ( or any other meaty white fish)
sea salt and pepper

Crunch Topping
1 teaspoon coconut oil
1 tablespoon oats
1 tablespoon quinoa
1 teaspoon walnuts, crushed
1 teaspoon hazelnuts, crushed

Babaganoush
1 eggplant (choose a heavy dark one - they have less seeds)
2 tablespoon tahini
1/2 lemon juiced
1 small garlic clove
1 teaspoon sea salt
1 tablespoon flat leaf parsley

Instructions

1.Turn grill on highest setting put whole eggplant under it
2. Grill 5-10 minutes then turn sides
3. Should be completely soft and the skin starting to burst when it’s done
4. Remove eggplant from the grill, cut off the top and peel away the skin 
5.Place crunch mix in oven at 180%C for 10 minutes
6. Add all crunch ingredients to food processor and blend to a crumb
7. Line a baking tray with baking paper
8. Rub fish with a little coconut oil on both sides and season with salt and pepper
9. Sprinkle the crunch mix on top of the fish
10. Place fish in oven at 180%C 15-20 minutes depending on the size of the fillet
11. Place eggplant in food processor-blender with Babaganoush ingredients blend until smooth
12. Spoon the Babaganoush onto plates and top with the Gemfish
